چکیده

Control of the raw material has considerable influence on final wine quality. The objective of this work was to develop a sensor capable of assessing grape juice quality in the cellar. Sensor response was compared with conventional chemical analysis using multivariate data techniques. The aroma sensor array is composed of 14 metal oxide sensors (MOS) gas transducers plus a temperature and a relative humidity sensor. This work showed that the sensor could detect rotten flavours in grape juice. Additional key words: degradation, measurement procedure, multivariate analysis.

Terpenes in the Aroma of Grapes and Wines: A Review

Wine quality is determined by a complex balance of all the wine aroma components as perceived by sensory evaluation. Although several sensory parameters may playa role in the acceptance and enjoyment of wine, the flavour of wine is possibly the most important factor. F1avour is the result of the interaction between certain chemical compounds in wine and the senses of smell and taste of the cons...

Meta-Analysis of the Core Aroma Components of Grape and Wine Aroma

Wine aroma strongly influences wine quality, yet its composition and its evolution during the winemaking process are poorly understood. Volatile compounds that constitute wine aroma are traditionally divided into three classes according to their origin: grape, fermentation, and maturation aroma. We challenge this view with meta-analysis and review of grape and wine volatiles and their precursor...

The Effects of Pre-Fermentative Addition of Oenological Tannins on Wine Components and Sensorial Qualities of Red Wine.

Today in the wine industry, oenological tannins are widely used to improve wine quality and prevent oxidation in wine aging. With the development of tannin products, new oenological tannins are developed with many specific functions, such as modifying antioxidant effect, colour stabilization and aroma modifications. The aim of this work is to investigate effects of pre-fermentative addition of ...

Title: “The role of yeast in grape flavor development during fermentation: The example of Sauvignon blanc”

• We know that aromatic compounds from the grapes themselves are important for quality and regional character. But whereas some varieties (like the Muscats) produce musts with similar aromas to those of the resulting wines, the musts of the majority of varieties are practically odorless. This is true for Merlot, Cabernet Sauvignon, Syrah, Sauvignon blanc, Semillon, Pinot noir, Gamay, Chardonnay...
